Hollandaise Sauce

Hollandaise is a rich egg-based sauce made with a lot of butter, egg yolks and flavoured with vinegar or lemon juice.
This is a versatile sauce and is the main component of Eggs Benedict. Hollandaise is also served over vegetables, e.g., steamed asparagus or steamed or grilled fish.
