Polly, one of our club members, brought a most delicious 'Mont Blanc' with her for our first meeting. I couldn't believe it when I first set eyes on it, because chestnut puree is one of my favourites. It was incredibly popular during the '70s, and Maria Cake Shop was particularly well known for their chestnut cake. Back then, the puree was made from fresh chestnuts and tasted wonderful. But these days, our chestnut cakes taste artificial, nothing like how it was years ago.
Nothing pleases me more than hearing from another foodie, and Maggie is truly passionate about cooking. She is Malaysian and grew up there, often helping her mother to cook for a big and extended family ever since she was 10 years old.
When Maggie starts to talk about food, she can go on and on...............just like me. And today, we will get to meet because this is our Cooking Club's first meeting. I am already impatiently waiting, waiting and waiting for the girls to arrive.....................
Maggie's husband, Rodney, showed me this cake of Maggie's (the cake is named Alice)............and I fell in love with the cake, I have never seen a cake so innovative in design and so so beautiful.............
"Alice - Wedding cake made up of many bite size cakes - mud cake & chocolate ganache. Each of the decorations on top is painstakingly hand made and was so tiny. Each cube is slightly bigger than 1 inch, so the decor & the piping on each cake was a slow process, but the bride and the guests were so impressed with the cake, so the hard work was worth it." - from Maggie

You just can't believe how busy I am lately as a full time mom.......baking, baking and baking. My little girl had invited her best friend to come over for play day, as a mom, have to prepare some sweet for the kids. I am sure cupcakes (I modified Annie's cupcake recipe at last week Singtao coz kids do not like Baileys) with strawberry cream cheese toppings are a very good ideas. I baked some cupcakes ............
For this Sunday's Sing Tao, we have the recipe for the Golden Cupcakes. But because of limited space, I cannot include variations to the cupcake so have to finish off here what we left out of the newspaper article.
Today Sing Tao is featuring the technique for decorating cupcakes. Actually, my advice is to let your hair down, and just let go............but you first need to know the basic tricks like making a ganache, chocolate cream frosting, mascarpone cheese toppings, tiramisu toppings etc. etc.
