Mrs. Hui's Roast Belly of Pork

This dish exemplifies my great friend Mrs Vanessa Hui's approach to life. Vanessa is exceedingly efficient, logical, and simplifies wherever possible. This recipe for roast pork with crackling is simple but delicious and brings out the best of what belly pork has to offer: tender flesh, sweet fat and crispy, crunchy crackling. Roast pork is a great addition to any Chinese meal, and also works well served at room temperature as a canapé with drinks.
